Cardamom Chocolate Truffles
Peel, pit and mash avocado in a bowl until smooth. Using a double boiler, melt chocolate chips on low heat. Once melted, remove from heat and add the cardamom oil and vanilla bean paste. Stir until well combined. Pour over avocado mixture, leaving a small amount out for dipping, and fully incorporate. Cover with plastic wrap and let chill in the fridge to set for a few hours.
Once mixture is set, scoop with a small cookie scooper and dip in remaining chocolate (if you'd like to use nuts pulse and mix in this dipping mixture.) Lining a tray with parchment paper, set truffles on tray. Play back in refrigerator until ready to serve.
